Harvesting begins in early November using mechanical methods, ensuring minimal fruit damage. The cold extraction process (malaxation temperature <27°C) takes place within 24 hours after harvest, preserving antioxidants and ensuring exceptional freshness. The oil is stored in certified stainless-steel nitrogen tanks, a method that removes oxygen and maintains perfect pressure balance as the tank empties — effectively protecting the oil from oxidation and maintaining its nutritional integrity until bottling.

The unique terroir of Arcadia, at altitudes above 650 meters, combines with plentiful underground and surface waters to create an ideal environment for Manaki olive trees to thrive. These optimal conditions result in an olive oil of remarkably low acidity, rich aroma, and authentic flavor.
